Pozole Soup Recipe

Cozying up to the fire with a bowl of soup in hand makes for the perfect winter evening! If you’re stuck in your three-soup recipes routine, we have a perfect soup recipe to spice up your soup game! Chicken Pozole! Pozole originated with the Aztecs and other indigenous tribes in Mesoamerica. This dish is full or favor and hits the spot when you’re craving both a stew and Mexican flavors! Here’s Chef Dustin’s recipe.


Ingredients

1 each Chicken, Whole

1 Tablespoon Salt, Kosher

¼ Cup Oil, Vegetable

3 Cup Onion, Yellow, Chopped

¼ Cup Jalapeno, Diced

3 cans White Hominy

1 bunch Cilantro, Chopped

2 Tablespoon Garlic, Chopped

1 each Lime, Juiced

1 teaspoon Black Pepper, Ground

Salt to Taste


Instructions Place chicken in a pot with 1 Tablespoon salt and cover with water. Bring to a simmer and cook until chicken pulls away from the bone. Remove the chicken from the water, reserving the water in the pot. Pull the meat off of the chicken in bite size pieces and reserve. Put the chicken bones back into the cooking liquid & return to heat. Cook on medium low heat until there is about 1 quart of liquid in the pot. Strain the stock & discard the bones. In a large sauce pot cook the onions in the vegetable oil on medium heat until soft. Add garlic and jalapenos & cook an additional 3-5 minutes. Add hominy, lime juice, reserved chicken stock & black pepper. Bring to a simmer and cook for 10-15 minutes. Add pulled chicken meat & cilantro & cook an additional 10 minutes. Season with salt to taste.

Shredded Green Cabbage

Fresh Avacado

Sliced Avocado

Lime Wedges

Diced Red Onion
